Raindrops on olive leaves, close up

Where the olive grove meets science

Our idea lab. Computer vision, spectroscopy, satellite data and traceability to understand every olive, every batch and every harvest like never before.

  • Our own technology
  • Science applied to the field
  • Proven in the real world before it is offered

Projects

Four projects, one vision

From tree to bottle. Four lines we study separately and aim to connect through traceable data.

Freshly washed olives moving along the reception belt of an olive mill

01 TRL 3 · proof of concept

Maturity from the belt

Observe the skin; check the flesh.

We study camera-based exterior ripeness and its combination with control cuts. We test real public images and synthetic scenes; the full index is not yet validated at reception.

What it will make possible A delivery-level maturity reference to support harvest and processing decisions once validated at a mill.

02 Validating

Yield estimation and harvest forecast

The harvest, before the harvest.

Satellite, weather and field data to estimate how many olives there will be, plot by plot, months before picking.

What it will make possible Planning the harvest, reception and sales with numbers, not impressions.

03 TRL 2 · laboratory research

The chemistry of each delivery

Composition, before milling.

We explore fat and moisture estimation with infrared light. We compare public data and simulated noise and sampling tests; no spectrometer of our own or validated acidity measurement.

What it will make possible Better knowledge of each delivery’s composition through laboratory references and representative acquisition.

04 TRL 3 · 300-member simulation

Coordinated harvest

The whole harvest, with every member in view.

We compare picking dates, crews and milling capacity in a simulated cooperative. We assess total value and individual losses: a better average does not guarantee everyone gains.

What it will make possible Planning with capacity limits and explicit settlement rules, then testing benefit and fairness against real data.

Status on 30 September 2026. Maturity and harvest: TRL 3; NIR: TRL 2. Their articles distinguish simulation and real public data; no mill pilot yet.

Under study

What we are studying

Questions we have not opened yet: first we review what is already known, then we decide whether they are worth developing.

  • Bottles of olive oil stored on shelves, each with its tag Under study TRL 1 Shelf life per batch On what date will this specific batch stop being extra virgin, given its packaging and storage temperature?
  • Wet olive pomace sliding down a steel chute with a sheen of oil Under study TRL 1 Oil left in the pomace How much oil is being lost in the pomace right now, without waiting for the lab?
  • Three olive mills with their lights on at dawn in an olive valley Under study TRL 1 Mills that learn together Does a model learn better across several mills, without any of them sharing their data, than in just one?
  • Open industrial malaxer with olive paste inside Under study TRL 1 Self-adjusting malaxation Can the mill adjust malaxation temperature and time to the olives coming in?
  • Wet olives on a belt, one with an olive fly puncture Under study TRL 1 Olive by olive Can a camera grade every olive on the belt by ripeness and damage, one by one?

Interested in one? We are looking for mills, labs and universities to open them

How we research

From the question to the field

  1. 01

    A real question

We start from whatever takes time today, is decided by eye or is known too late.

  2. 02

    A measurable answer

We build the solution and measure honestly how often it is right and when it fails.

  3. 03

    Tested in the harvest

We take it to the field and the mill, in real conditions and against the usual measurements.

  4. 04

    Product

Only what truly works reaches Agritech, Digital Twins or Intelligence.

Aceituneros

Miguel Hernández

Andaluces de Jaén,
aceituneros altivos,
decidme en el alma: ¿quién,
quién levantó los olivos?

No los levantó la nada,
ni el dinero, ni el señor,
sino la tierra callada,
el trabajo y el sudor.

Unidos al agua pura
y a los planetas unidos,
los tres dieron la hermosura
de los troncos retorcidos.

Levántate, olivo cano,
dijeron al pie del viento.
Y el olivo alzó una mano
poderosa de cimiento.

Andaluces de Jaén,
aceituneros altivos,
decidme en el alma, ¿quién
amamantó los olivos?

Vuestra sangre, vuestra vida,
no la del explotador
que se enriqueció en la herida
generosa de sudor.

No la del terrateniente
que os sepultó en la pobreza,
que os pisoteó la frente,
que os redujo la cabeza.

Árboles que vuestro afán
consagró al centro del día
eran principio de un pan
que sólo el otro comía.

¡Cuántos siglos de aceituna,
los pies y las manos presos,
sol a sol y luna a luna,
pesan sobre vuestros huesos!

Andaluces de Jaén,
aceituneros altivos,
pregunta mi alma: ¿de quién,
de quién son estos olivos?

Jaén, levántate brava
sobre tus piedras lunares,
no vayas a ser esclava
con todos tus olivares.

Dentro de la claridad
del aceite y sus aromas,
indican tu libertad
la libertad de las lomas.
